We are excited to announce that Pavillon de Roze has welcomed a new master chef: Aleksandr Baindurshvili! This talented Georgian chef brings unique dishes inspired by traditional and modern culinary arts to our menu.
Sandro graduated from the Tbilisi Theological Seminary, and later, his friends, noticing his passion for cooking, submitted applications to a culinary school and paid for his tuition without informing him. After finishing his studies, Aleksandr became the head chef for GMP Group, where he organized a café and catering services. He then continued his career at the “Terasa” restaurant in Tbilisi, combining Georgian and European cuisine as an event chef catering large-scale events.
Later, Sandro moved to Kyiv, where he became the executive chef at one of the largest Georgian restaurants, "Shoti"! After working in Ukraine, he relocated to Bavaria, where he opened a wine restaurant, and then moved to Almaty, Kazakhstan, where he worked as a chef at the restaurant “Sagamo.”

In 2019, Sandro participated in the international “Bocuse d’Or” competition in Lyon, where Georgian gastronomic culture was represented on the global stage for the first time. In 2021, professors from the Basque Culinary Academy came to Georgia as part of the USAID Georgia program. Out of 75 chefs, four were selected, including Aleksandr. These chefs were retrained in molecular gastronomy and received the corresponding certifications. Afterward, Sandro began conducting lectures on theory and practice for local chefs.
We are proud to present Aleksandr Baindurshvili’s updated menu, which blends the finest traditions of Georgian cuisine with his unique vision. We highly recommend trying the chef’s special dish — Megrelian Kharcho, which will captivate you with its rich flavor and originality.
